I’ve said it before, and I’ll say it again. Christmas is the only time when I have an excuse to eat twice as much potato for dinner!
I love my roasties, and I love my mash, but I’m sure that both are the main players in the food coma I annually find myself in following a good Christmas dinner.
So, why not replace traditional mashed potato with a slightly lighter sweet potato mash?
As part of my 25 days of blogmas Christmas veg series, I’ve developed a deliciously festive sweet potato goat’s cheese mash recipe that I hope will get your tastebuds tingling!
Think nutmeg, goat’s cheese and large spoonfuls of creamy sweet potato. Hope you enjoy making this one!
- 2 sweet potatoes, peeled
- 100g goat’s cheese, cubed
- 2tsp ground nutmeg
- 4tsp chives
Boil the sweet potatoes over a medium heat for approx 20 mins, until soft when stabbed with a fork. Drain and return to the hob with the goat’s cheese, nutmeg and chives. Mash and serve with extra chives to taste.
