Apple and basil smoothie

I read an article recently on how being healthy has become kinda trendy of late.

Supermarkets are stocking foods like kale and quinoa as commonplace, picking up a green juice instead of a coffee in the morning no longer elicits cries of “Ooh get you being all healthy!”, and passing on Saturday night vino for fear of messing up Sunday’s training plans is definitely less ‘frowned upon’.

There’s something to be said for jumping on the healthy living bandwagon. Usually I skip from trend to trend, or ‘fad to fad’, in less than a blink of an eye (I’m fickle like that!) But when I first started following trending health and fitness blogs last year, I decided to ride the healthy living bandwagon all the way to its destination.

My tastebuds soon adapted to eating more vegetables and wholegrains, with both my brain and body knowing we might be onto something. And while I’m in no way trying to push my own diet decisions on everyone else, I’ve personally noticed the difference it’s had on my energy and mood, and that’s made me want to stick at it. Plus it’s pretty fun trying to cook up actual tasty healthy recipes – trust me, not all of them out there are winners!

So here’s to green smoothies, early morning workouts, quinoa, spinach and kale – you might be passing trends but you’ve certainly got my attention for now…

Having said that, I still find it hard to pass up a takeaway pizza of a weekend (I’ve mentioned that’s my favourite food before, right?)

Apple and basil breakfast smoothie

Ingredients

  • 1/2 a glass of spinach
  • 1/2 an avocado
  • 4-5 basil leaves
  • juice of 1/2 a lemon
  • 1 apple, peeled and chopped (discard the seeds and core)
  • 1 tbsp baobab powder
  • 2 tbsp oats
  • water

Method

Use the glass you’re intending to drink your smoothie from to compile the ingredients.

Fill up the glass to halfway with spinach. Add the avocado, basil leaves, lemon juice, apple, baobab powder and oats. Then fill up the glass to three quarters of the way full with water.

Transfer the ingredients to a blender and blend until smooth before decanting back into your glass to drink.
